The topic of discussion this week at TH is quality time with Dad. To end the week we are sharing Dad's favorite meal. I posted a recipe for steak marinade, since that is Daddy's favorite. You can't have steaks without potatoes! This potato bake is basically twice baked potatoes without all the mess of having to reload the hollowed out skins. I typically do not measure out the ingredients, but use the recipe as a guide. I have also added a couple of spoonfuls of sour cream before baking and it makes it even better! Tweak it to your liking.
Loaded Mashed Potato Bake
1 lb red potatoes (about 3 medium Idaho), cut into chunks
1/2 cup evaporated milk (I have used regular milk too)
2 TBSP butter
1/2 cup plus 2 TBSP shredded cheddar cheese, divided
1/3 cup real bacon bits, divided
1/4 tsp garlic powder
¼ tsp salt
1 TBSP thinly sliced green onion
Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain. In a small mixing bowl, beat the potatoes, milk, and butter until blended. Stir in ½ cup cheese, 3 TBSP bacon bits, garlic powder, and salt. Transfer to a 1 quart baking dish coated with nonstick cooking spray. Sprinkle with remaining cheese. Top with onion and remaining bacon. Bake, uncovered, at 350° for 15-20 minutes or until heated through and cheese is melted.
