Trade You Tuesday


Over at Whitney Caroline Designs she is hosting a Trade You Tuesday for slow cooker recipes. Here is my MIL's Mexican Pork and Beans. It's a great recipe for a dinner party. The hostess can cook the meat and beans and the guests can bring the rest!



Pork Tenderloin or Boston Butt Pork Roast
1 lb dried pinto beans
12 oz salsa
2-3 tsp chili powder
1 tsp cumin
1/4 tsp oregano

Wash pinto beans and place in crock pot (I use my 6.5 qt). Cover with water and then add some extra water. Add pork and remaining ingredients; stir.

Cook on low for about 18 hours (It doesn't take my MIL quite this long, so it depends on your crock pot). Stir every few hours and add water to keep moist. Meat should fall apart. If it doesn't, chop it up (so it is a shredded consistency) and mix well with beans.

To serve, layer the following as you prefer:

Chips, meat/beans, lettuce, tomatoes, cheese, sour cream, guacamole, salsa, etc.
Serves at least 8-10.
